Meal of the Week

For this week's meal, I chose pasta.   This recipe is fairly easy to make, doesn't take a lot of preparation time, and is wonderful enough to serve to family or company!!

Entree

Pasta Primavera

12 oz. uncooked fettuccine or linguine
1 tablespoon olive oil or vegetable oil
1 cup frozen broccoli flowerets
1 cup cauliflowerets
1 cup thinly sliced carrots
1 cup frozen green peas, thawed
1/2 cup chopped onion
Alfredo Sauce (recipe follows)

Cook pasta according to package directions.
Meanwhile,  heat oil in a large skillet over medium-high heat.  Cook broccoli, cauliflowerets, carrots, peas and onion in oil for about 8 minutes, stirring frequently, until vegetables are crisp-tender.

Prepare Alfredo Sauce (recipe follows), and stir sauce into vegetable mixture.  Drain pasta, then stir the pasta into the sauce.  Heat completely through.  Sprinkle your favorite grated cheese over top.
(For a variation, you can add 1-1/2 cups cooked, cubed chicken breast)

 

Alfredo Sauce

1/2 cup butter
1/2 cup heavy cream
3/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon salt
pepper to taste

Heat butter and cream in a saucepan over low heat, stirring constantly, until butter is melted.  Stir in cheese, garlic powder, salt and pepper.  Serve over pasta.

 

(This meal is excellent, served with your favorite garlic bread and a side salad!)

Dessert

Cherry Crisp

2 21-oz. cans cherry pie filling
2/3 cup packed brown sugar
1/2 cup flour
1/2 cup quick-cooking oats
1/3 stick butter, softened
3/4 teaspoon ground cinnamon
3/4 cup ground nutmeg

Heat oven to 375 degrees.  Spray bottom and sides of a square pan with cooking spray.

Pour pie filling into pan.  In separate bowl, mix remaining ingredients, and pour evenly, over top of the cherry filling.

Bake about 30 minutes or until topping is golden brown.  Serve warm with a scoop of vanilla ice cream, if desired.

Beverage Suggestion:

Sparkling Citrus Punch

1 cup cold water
1/2 can (3 oz.) frozen orange juice, thawed
1/2 can (3 oz.) frozen grapefruit juice, thawed
1/2 of a 1 liter bottle of sparkling water, chilled

Mix all ingredients in a pitcher.  Service over ice.
Garnish with strawberries and orange slices, if desired.
