This meal is an all-in-one dish that takes approximately 20 minutes to prepare from start to finish.

Entree

I found this recipe and tried it out on my family this week.  They enjoyed it so much, and so I thought I'd share it with you.

Lemon-Pepper Pasta & Chicken

8 oz. linguine or fettuccine
1 cup frozen peas, cooked
3 tablespoons olive oil
3 chicken breasts, cooked and cubed into bite-sized pieces
1 medium-sized onion, chopped
1-1/2 teaspoons dried marjoram
1/2 teaspoon garlic powder
1/4 teaspoon salt
2 tablespoons lemon pepper
1 tablespoon lemon juice
Parmesan Cheese

Prepare pasta according to package directions.  When done, drain, and return to pot.  Toss pasta with 1 tablespoon of olive oil and add cooked peas.

Meanwhile, in a large fry pan, heat the remaining olive oil over medium heat.  Saute onions and add the dried marjoram, garlic powder, and salt.

When onions are done to transparency, add cooked cubed chicken and stir in the lemon juice.

Cook and stir for 2-3 minutes, browning the chicken cubes.
Pour skillet mixture into the pasta and toss, along with the lemon pepper.
(You may need to add a bit more olive oil or melt a little butter down over pasta if it seems too dry.)

Heat entire pot of pasta, tossing occasionally to keep from burning, about 5 minutes, or until completely heated through.

Serve with parmesan cheese sprinkled over top.

Side Dish

Seasoned Breadsticks

(Ok, so this isn't exactly a side dish, but kinda sorta is.....and goes really well with the entree.   Little preparation is involved, thus making it not so time-consuming for you, and family or guests  will love them!)

1 tube Pillsbury brand breadsticks, found in the refrigerated section of your grocery store (or your favorite brand)
1 stick butter
2 teaspoons Italian Seasoning
2 teaspoons Oregano
1/2 teaspoon garlic powder

Open tube of breadstick dough and separate each breadstick, placing on a sprayed cookie sheet.  (I like to twist mine rope-like style, but you can leave them straightened if you wish)

In a small saucepan or in a bowl in the microwave, melt butter completely, and add all spices.

Mix together and brush each breadstick with mixture, coating each one well.  Bake in oven according to package directions, (usually at about 350 degrees for 12-15 minutes) or until golden brown.
Serve in a breadbasket on your table and enjoy!

Dessert

Hot Apple Spice Sundae
(an excellent dessert!)

2 tablespoons butter
1/2 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1 can apple pie filling
1/4 cup chopped walnuts (optional)
1 quart vanilla ice cream

Melt butter in a small fry pan.  Add sugar, cinnamon and apple pie filling.  Heat through until bubbly and hot.

Remove from heat, and stir in the nuts.
Serve warm over the ice cream.

 

Beverage Suggestion:  After ice cream, top off the evening with a great cup of coffee....with a little kick. - - -

Bailey's and Coffee

1-1/2 oz. Bailey's Original Irish Cream
(found in your local liquor store)
Hot coffee
Whipped Cream

Pour the Irish Cream into a coffee mug.
Fill with hot coffee.
Top with whipped cream!
