Meal of the Week

 

Dear Warren,
    Show her a night she'll never forget.  You know how she hates to cook unless she can prepare it in twenty minutes or less.  This week's meal is for you.  It's easy to make, and she'll be so impressed by "all the trouble" you went through just for her.  This'll take a little more than twenty minutes, but not MUCH more.  Send her to the bathtub full of bubbles while you cook.  Before she comes downstairs, turn down the lights, put  Nicholas Gunn (new age) or Oscar Peterson (jazz) on the stereo, set the table, light the candles, and put a single rose across her plate.  Escort her to her place at the dining table, kiss her on the cheek, and YOU take care of the rest......  and for goodness sake, DON'T let her see this page!!  Let her think the idea was all yours!

Entree

Robyn's Really Good Fettuccine

 

1 12-oz. box Fettuccine
2 jars Five Brothers Three Cheese White Sauce (or Pesto Sauce)
1 3-oz. can mushroom stems & pieces
1-1/2 cups frozen peas, cooked and drained
1-1/2 lbs. sausage, cooked (large rope Italian sausage)
6-8 slices bacon, cooked and crumbled
Olive Oil

Cook fettuccine according to package directions.  When done, drain.
Return fettuccine to pot, and add a small splash of olive oil.
Add white sauce, two jars may be a little too much, but you be the judge of how much you'd like.
Add mushroom stems and pieces and cooked peas.
Cut sausage into slices and add to fettuccine.  Add crumbled bacon.
Heat through until hot and bubbly.
Make sure you have plenty of grated Parmesan cheese on hand to put on top.

**If there are just two of you, you'll have plenty of great leftovers to take to work.  This recipe normally serves about 4 people.

Side Dishes

Ok, Warren, here's the really easy part.  Go to the salad bar at your favorite grocery store and build a salad.  Bring home just enough for the two of you.  Toss it into a couple of bowls, and serve it with your favorite salad dressings.

Next:  While you're at the grocery store, head toward the freezer section and buy a loaf of frozen garlic bread already prepared....most of them come in an aluminum wrapper.  You can just throw it into the oven and heat it up according to the directions on the outside, and serve.  (Hint: you might want to cut the end of the wrapper to allow for better heating.)
**Take bread out of wrapper and put into a bread basket lined with a napkin for appearance sake.  Wrap the napkin around the bread to keep it warm.

 

 

Dessert


Angel food Cake with Mocha Butter Cream

Ok, here's a really easy way to dress up a dessert without really trying... stay with me here, Warren, you can do it!!!

One store-bought Angel Food Cake
2-1/2 sticks butter
4 tablespoons instant coffee
2 tablespoons sifted powdered cocoa
2 cups powdered sugar
One can of pineapple rings
Chocolate sprinkles (found in the baking section of the store near the flour and sugar, Warren....)

Prepare icing:

Beat butter until soft and smooth... light and fluffy.
Add instant coffee, cocoa and powdered sugar.  Beat until very light.
Spread mixture over cake, covering top and sides.
Cut pineapple rings in half and garnish cake around sides with them, then cover top and sides of cake with chocolate sprinkles.

After dinner beverage suggestion:

Tropico Sunrise:                
2 oz. Tropico
1 oz. Bacardi Gold Rum
4 oz. Orange Juice
1/2 oz. Grenadine

Fill a tall glass with ice, Tropico and Rum.  Add orange juice and top with grenadine.  Garnish with an orange slice and a cherry.
