Meal of the Week

 

Welcome to Robyn's Recipes!! 
My heritage is Scottish, Irish, English and German....
This week, the Celtic side of me seems to have taken over, and I'd like to share with you, a bit of the Irish....
So picture, if you will, green grasses, the wind in your hair, Irish pubs and dartboard tournaments....
and the best of Irish cuisine.

 

Entree

Irish Hot Pot

 

6 potatoes, peeled and sliced thin
2 onions, sliced thin
3 carrots, peeled and sliced thin
1/4 cup cooked rice, (long grain, not instant)
1 14 oz. can peas with liquid
1 20-oz. package sausage links, browned
1 15-oz. can condensed cream of tomato soup , diluted
One soup can full of water
Salt and white pepper to taste

In a buttered, 4-quart casserole, layer the potatoes, onions and carrots, and season each layer as you go with the salt and pepper.
Sprinkle with rice, then the peas with their liquid and top with the sausage.
Mix the soup with one can of water.  Pour over entire casserole.
Bake, uncovered, at 375 degrees for one hour.
Remove cover, turn sausages and bake an additional hour, uncovered.

 

On the Side....

Irish Soda Bread

3 cups flour
1 cup raisins
1/2 cup sugar
1 egg
2 teaspoons baking soda
2 tablespoons oil
1-1/2 teaspoons Caraway Seed
1-1/2 cup buttermilk

Mix all ingredients together.
Spray or grease a round cake pan and press bread evenly into pan to fill it.
Dough will be somewhat sticky.
Using a knife, cut a large X across the whole top of bread.
Bake at 350 degrees for 40-45 minutes, or until done.

 

 

Your Dessert...

Bailey's Irish Cream Cake

 

1 package yellow cake mix
4 oz. package vanilla instant pudding
3/4 cup oil
1/8 cup water
1/4 cup Vodka
3/8 cup Bailey's Irish Cream (found in your local liquor store)
4 eggs


Combine cake mix, pudding mix, oil, water, vodka, Bailey's Irish Cream, and eggs in a bowl.  Beat until smooth.
Pour into a greased and floured 10-inch Bundt pan.
Bake at 350 degrees for 40-50 minutes or until done.  Remove from pan and cool completely.
Mix a glaze of Bailey's Irish Cream and some powdered sugar to a thick consistency and drizzle over cake.

 

Beverage Suggestion

Original Irish Coffee

Per serving:

 

1 cup Coffee, freshly brewed
3 teaspoons sugar
3 tablespoons Irish whiskey

Pour coffee into a large mug.
Add sugar and stir to dissolve.  Add whiskey and stir to combine.
Top with whipped cream and serve.
