Mother's Day Celebration!


This week's page is dedicated to my 15-year-old son, Justin.  I want to be just like him when I grow up.....

"Justin, I feel I've had a brand new opportunity to get to know you all over again.  You've taught me more about life, more about you, and more about myself than I could ever have known, otherwise.  Thank you for teaching me all about Joe Satriani ---the only guitarist in the world, about Ozzy, Black Sabbath, Randy Rhoads and Yngwie Malmsteen.  Thank you for teaching me about all the interesting stuff you learn about in school and out of school.  Thank you, Justin, for still letting me hold your hand, for dancing me around the kitchen each day, for singing in that crazy voice while you're twirling me all around.  Thanks for still giving me kisses on my cheeks and for still telling me a million times a day that you love me.  Thank you for not being embarrassed to be seen with me in public even though I'm your ol' mom.  Thanks for saying you're sorry even when it may not be necessary.  Thank you for letting me raise you, and then allowing me to sit back and watch the person that I got to help you become.  Thank you for not only allowing me to be a part of your world, but for actually inviting me in to it.  Thank you for being my best friend.  I love you more than anything and I'm so blessed to have you for my 'ittle boy.   I'll always be there for you no matter what, and I'll never let you down.   To me, you are what life is about.  Thanks for being a great, great son.  I could never have had a better son than you.  You are the world to me.

Breakfast

 Glazed Cinnamon Biscuits

1/3 cup firm butter
2 cups flour
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
3 tablespoons butter, softened
3 tablespoons sugar
1 teaspoon ground cinnamon
Glaze (recipe follows)

Heat oven to 425 degrees.  Spray 8 medium muffin cups with cooking spray.

Using two knives, cut 1/3 cup butter into flour, 2 tablespoons sugar, the baking powder and salt in a large bowl, until mixture resembles fine crumbs.  Stir in just enough milk so dough leaves sides of bowl and forms a ball.

Turn the dough onto a lightly floured surface.  Knead lightly 10 times.  Roll into a rectangle, about 12X10 inches.  Spread 3 tablespoons margarine over rectangle.  Mix 3 tablespoons sugar and the cinnamon.  Sprinkle over rectangle.  Cut the rectangle crosswise into 6 strips, 10X2 inches.  Stack strips.  Cut crosswise into 8 pieces.  Place cut sides up in muffin cups.
Bake 16-18 minutes or until golden brown.  Immediately remove from pan.  Drizzle glaze over warm biscuits and serve warm.

Glaze

1/2 cup powdered sugar
2 to 2-1/2 teaspoons milk

Mix together until smooth and thin enough to drizzle, then use as directed above.

 

 

 

Dinner

Entree

Chicken Cacciatore

3 to 3-1/2 lbs. chicken parts
1/2 cup flour
1/4 cup vegetable oil
1 medium green pepper
2 medium onions
2 cloves garlic, crushed (or 1/2 teaspoon garlic powder)
1 16-oz. can whole tomatoes, drained
1 8-oz. can tomato sauce
1 cup sliced mushrooms
1/2 teaspoon dried oregano leaves
1/4 teaspoon dried basil
1/2 teaspoon salt
Grated Parmesan cheese

Coat chicken with flour.
Heat oil in a large skillet over medium-high heat.  Cook chicken in oil 15-20 minutes or until brown on all sides, then drain.
Cut green pepper and onions crosswise in half.  Cut each half into fourths.  Stir green pepper, onions and remaining ingredients except cheese into chicken in skillet, breaking up tomatoes.  Heat to boiling.  Reduce heat.  Cover and simmer 30-40 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.  Serve with Parmesan cheese if you wish.

 

 

 


Side Dishes

Lemon & Basil Pasta

This makes a great side dish and really compliments this meal, but actually is usually used for an entree.  Either way, it's excellent!!

6 oz. angel hair pasta
1/4 cup chopped fresh basil leaves  (fresh basil really is best for this recipe, but you can substitute 2 tablespoons dried basil, if necessary)
1/4 cup lemon juice
1 tablespoon grated lemon peel
3 tablespoons olive oil
1/2 teaspoon black pepper (if you have freshly ground, even better!)
Grated Parmesan cheese

Cook pasta in boiling water 3-5 minutes or just until tender, then drain.
Toss with remaining ingredients except cheese.
Sprinkle a little cheese over each serving, if you wish.

 

Summer Vegetables

1 large bunch broccoli flowerettes
2 summer squash, sliced

Steam broccoli flowerettes for 5 minutes, then add squash slices.  Steam just until done to your likeness, mix together, and serve.

 

Beverage Suggestion:  Ice Cold Lemonade

 

 

Dessert

Oatmeal Spice Cake

1-1/2 cups flour
1 cup quick cooking oats
1 cup packed brown sugar
1/2 cup granulated sugar
1-1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 cup butter OR Crisco
1 cup water
2 eggs
2 tablespoons molasses
Butter Frosting (recipe follows)

Heat oven to 350 degrees.
Spray a rectangular pan with cooking spray then lightly flour the pan.
Beat all ingredients with electric mixer in a large bowl for 30 seconds on low speed, scraping bowl constantly.  Beat on high speed for 3 minutes, scraping bowl.  Pour batter into pan.
Bake 35-40 minutes or until toothpick inserted in center comes out clean.  Cool in pan on wire rack.

Prepare frosting and spread on cooled cake.

 

Browned Butter Frosting

1/3 cup butter
3 cups powdered sugar
1-1/2 teaspoons vanilla
About 2 tablespoons milk

Heat butter over medium heat until delicately browned.
Mix in powdered sugar.  Beat in vanilla and enough milk until smooth and spreadable.
