You're
dreaming of him...

you think of nothing else but him.

From the moment he says your name,
your heart extends toward his.
Ask him if he'd like to take a
walk with you. Then talk to him,
tell him how you feel.
I offer this special dinner for a
romantic evening for two.
The rest is up to you...

Broccoli
& Cheese-Stuffed
Chicken Breasts

tablespoons butter or margarine
1/2 small onion, chopped
1 teaspoon dried tarragon
1/2 pound broccoli
1 tablespoon water
3/4 cup shredded Swiss cheese
2 skinless, boneless chicken breast halves
Chive-Tarragon Sauce (recipe follows)
Melt
butter in a wide frying pan over
medium heat. Add onion and tarragon.
Cook, stirring often, until onion is soft.
Meanwhile, trim and discard ends of broccoli
stalks. Coarsely chop. Peel and chop stalks.
Add to the flowerets. Add all broccoli and
water to the frying pan. Cover and cook,
stirring occasionally, until broccoli is
crisp-tender (about 5 minutes).
Remove from heat. Drain any liquid
from the pan. Stir in half of the
cheese and let cool.
Rinse
chicken and pat dry. Place each breast
between 2 sheets of plastic wrap or waxed paper.
Pound with a flat-surfaced mallet until
about 1/4 inch thick. Lay each chicken piece
flat. Mound half the broccoli mixture in the
center of each. Roll chicken around the filling
to enclose. Set chicken bundles, seam side down
and slightly apart, in a sprayed baking pan.
Sprinkle with remaining cheese.
(*If you're preparing these in advance, at this
point, cover and refrigerate until ready to bake.)
Bake,
uncovered, at 450° until the meat in the
center of the bundles is no longer pink
and filling is hot. (approximately 20-25 minutes)
Cut to test. Meanwhile, prepare the
Chive-Tarragon Sauce and set aside.
When
chicken is done, broil it 4-6 inches below
heat just until cheese is lightly browned, about
2 minutes. Offer sauce on the side to
spoon over individual servings.

2 servings.
Chive-Tarragon
Sauce
In
a bowl, stir together 1/3 cup of
white wine vinegar plus 2 tablespoons sugar,
1/2 teaspoon dried tarragon, 1/2 teaspoon more
sugar, and 1-1/2 teaspoons dried chives.
Warm the sauce for a few minutes on top of
stove, then serve on the side.

lb. small new potatoes, scrubbed
1/2 stick of butter
1 teaspoon curry powder
1 teaspoon mustard seeds
1/2 cup sliced green onions
Salt
Cook
potatoes in boiling water until tender.
Drain and let cool briefly. Then coarsely chop
the potatoes.
Melt the butter in a frying pan over
high heat. Add potatoes and cook, stirring
often, for about 5 minutes. Add more butter,
if needed, to prevent sticking.
Sprinkle curry powder and mustard seeds over
potatoes and stir until blended.
Continue to cook, stirring often, until potatoes
are lightly browned. Stir in onions and cook,
stirring, until onions are warm. Season to taste
with salt.
